Fredericksburg Restaurant Inspections: Wendy's, Tacos Anita's
The Rappahannock Area Health District found violations at two restaurants and declined to offer a permit to one location.
FREDERICKSBURG, VA — Officials from the Rappahannock Area Health District inspected multiple food storage and preparation businesses in the Fredericksburg area from March 23-30, including two locations that had violations.
Recently, the health district has primarily conducted "training" inspections. These inspections take place over the phone, and a representative from the health district ensures that the restaurant is following the governor's Phase Three requirements for businesses.
Due to the ongoing coronavirus pandemic, many inspections are being conducted virtually. So, the listed violations may not be an all-encompassing rundown of all the violations at a particular establishment.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- The follow physical structures in the kitchen were noted in need of cleaning: 1-several ceiling tiles, 2-HVAC vents, 3-the door leading to the dining room.

- Permit: Not issued
- The following areas must be addressed before a permit is given:
- Ensure hand soap is available at the men's toilet room hand sink.
- Install sink guard on the left hand side of the kitchen hand sink to prevent splash when food is being prepared/prepped in the 2 vat sink. The hand sink is located less than one foot from the 2 vat sink.
- The facility will be using Chorine sanitizer, ensure plain unscented bleach is purchased and available for inspection.
- Replace scratched cutting boards stored on the 2 vat sink and along the prep area.
- Cleaning is needed in the following areas: interior of the 2 vat sink, floor drain under the 2 vat sink, flooring in the bar area, dining room and toilet rooms.
- Replace absorbent ceiling tiles in the female toilet room.
- Clean nonfood contact surfaces of the following equipment: top and underside of shelving of the range, gaskets and shelving of the 3 door upright cooler.
- Ensure the 2 door upright freezer and 3 door upright cooler are available for inspection. Due to limited refrigeration these units will be needed for cold holding and cooling of TCS foods.
- Install mop and broom rack for storage.
- Label washable containers used for oil storage at the cook line.
- Discontinue reuse of manufacturer containers to store foods. These containers are intended for single use only and may not withstand repeated washing and sanitizing.
- Replace non-stick pans which the non-stick surface is scratched. Three pans were observed in this condition.
- Replace burned out ceiling lights in the ware washing area.
