Brothers Meatballs Aims To Show Plant-Based Food Can Be Delicious
Think plant-based food is tasteless? Chefs Mauro and Sergio Corbia set out to challenge that with Brothers Meatballs.
HOLLYWOOD, CA — A new plant-based comfort food location has opened up on Sunset Boulevard, ran by two chefs who are more than familiar with the Hollywood dining scene. Brothers Mauro and Sergio Corbia, who together run Fabiolus Cafe, launched a new project called Brothers Meatballs, featuring meatless meatballs that offer a healthier twist on a beloved Italian classic.
Rather than beef or turkey, the meatballs are made with Impossible Foods, along with a home cooked blend of Italian spices. The restaurant also features plant-based options such as a lasagna with crispy eggplant, along with an array of salads and desserts.
"A lot of times people will say that plant-based food is tasteless," the chef's told Patch. "We took that as a challenge. We wanted to create a menu of food that tastes absolutely delicious and just happens to be plant-based. We think that following a plant-based diet shouldn't mean you're deprived of great-tasting dining options."

Plans for Brothers Meatballs were in motion prior to the pandemic, and the two chefs refused to allow the virus to derail the forthcoming restaurant. After adapting to outdoor dining and focusing on takeout and delivery, Mauro and Sergio decided the project could be a silver lining in the midst of coronavirus.
"We began planning for Brothers Meatballs prior to COVID and it's been a passion project of ours for some time now," Corbia said. "We feel that consumers are deserving of something good after such a challenging year and if we're able to create a restaurant that provides them with delicious food and safe outdoor dining options, we wanted to do just that.

Brothers Meatballs will reside right next to Fabiolus cafe at 6268 Sunset Boulevard, the former site of the Bowery. The restaurant is open from 12 p.m. - 10 p.m. every day.
