How To Roast Pumpkin Seeds: Halloween 101

Wondering what to do with all those seeds left over from carving pumpkins into spooky Halloween jack-o'-lanterns? Here's a simple recipe for baking pumpkin seeds. These nutritious snacks are loaded with potassium and packed with fiber, protein and antioxidants. So, don't throw them away!
Separate the seeds in a bowl as you clean your pumpkin. Heat the oven to 300 degrees. Rinse the seeds in cold water and strain. In a bowl, toss the seeds in just enough olive oil to coat.
Place aluminum foil over an edged baking sheet and spread seeds in a single layer. Season seeds with salt to taste. Bake for 30 minutes. Let cool and enjoy. Seal leftovers in an airtight plastic container.
