Build-Your-Own Pizza Restaurant Pieology Opens In Brookfield

Yes, there's a pandemic on, but ya still gotta eat...

BROOKFIELD, CT — For over four months, your instincts have told you there is no better counter to a pandemic than fresh pizza.

Sure, the science may be a little shaky, but deep down you knew it to be true.

True-believers in Brookfield and Danbury now have one more altar at which to worship. Artisanal pizza restaurant franchise Pieology has just opened its second Connecticut location at 15 Federal Road.

"With this opening, local diners can experience hand-crafted pizzas with only the freshest ingredients and signature sauces," said local entrepreneur and owner Regal Patel. "As a leader in innovative menus, Pieology serves creativity."

Which is fine, of course, but what you really want is pizza, and Pieology doesn't disappoint in that department, either. Their menu runs the spectrum from the gluten-free vegetarian-friendly "GF cauliflower" to the meatatarian-friendly "mega meat," with every pizza color in between. If you find yourself in the mood for a wheat-crusted Gorgonzola pie with jalapeños and nut-free pesto sauce, you can build one, choosing from a wide selection of crusts, cheeses, sauces and toppings prepared fresh daily.

Located near Stew Leonard’s on Federal Road, it marks the second Pieology to be opened by a trio of friends-turned entrepreneurs. The first is in Stamford.

Regal shares ownership with Sahil Patel and Nishant Patel, and while they share the same last name, he and his partners are not related. Regal lives in New Milford, Sahil in New Haven, and Nishant in Danbury. He says one reason for opening the new location was to have a restaurant "closer to home."

"We are also deeply committed to helping our community, especially during the current environment, by creating jobs and donating food," Regal said. "People need food, and people need jobs, and that's why we’re here and love what we're doing – we want to help turn things around.”

The only thing that concerns Pieology more than quality is safety, according to the restaurateur, which is why they are offering contactless delivery and pick up options. Signs at the entry door and placement stickers on the floor advise patrons to stay six-feet apart.

The new Pieology also offers outdoor, socially-distanced picnic-style dining, and customers are encouraged to bring their own beer and wine.

Pieology Brookfield/Danbury will be open seven days a week for lunch and dinner, from 11 a.m. to 11 p.m.
