Popular New Haven Restaurant To Close
The owner will start a new venture in a few months.

NEW HAVEN, CT — Caseus Fromagerie and Bistro will close on July 21 after more than 10 years in business. The restaurant offered a wide variety of cheeses and other foods. Owner Jason Sobocinski said he is ready for something new and will join longtime Caseus employee Chef Alex Craig in a new venture.
The new project will offer more catering services and healthier food. The Caseus space will undergo renovations with a target date of opening the new venture in early September.
"I’ve made the decision to close Caseus to pursue other projects and most importantly devote more time to raising my three young children and of course seeing my wife every now and then," Sobocinski said.
