Cooper's Hawk Construction Starts Soon: Mayor

The highly anticipated project was discussed at Monday night's village board meeting.

NEW LENOX, IL - New Lenox Mayor Tim Baldermann is now in his third term of office but as far as we know, he does not own a T-shirt that reads, "I Make Miracles Happen." For years, New Lenox residents implored their village leaders to court Cooper's Hawk. Cooper's Hawk has a reputation for elegant dining and it's considered a high-quality restaurant. Last November, the village mayor made thousands of New Lenox residents ecstatic when he announced Cooper's Hawk Winery & Restaurants, as well as a Pete's Fresh Market, will be opening new locations in New Lenox along Route 30.

Cooper's Hawk and Pete's will build their businesses on a 9.5-acre plot of land east of Schoolhouse Road near Lincoln-Way Central High School.

On Monday night, at the village board meeting, village officials received an update on the Cooper's Hawk construction plans. The construction for Pete's is still further down the road, which was always the case, the mayor noted.

"Cooper's Hawk has made it a goal to be open in November, sometime in November," Baldermann told New Lenox Patch on Tuesday morning. "Construction should be starting in the next two weeks. So we're really excited."

The goal for Pete's Fresh Market is to open in the spring of 2020.

Baldermann fully expects that Cooper's Hawk will have a waiting line of guests once the place opens in New Lenox.

"They've got some amazing statistics," he said. "It's just a phenomenal chain, a phenomenal business. We're excited they're coming to town."
