The Fat Shallot Leases Wilmette’s Gillson Beach Snack Bar
Award-Winning Fare Will Elevate Beach Concessions
Wilmette, IL, May 20– The Wilmette community is celebrating a delicious addition to their culinary scene. The Fat Shallot, an award-winning enterprise with two Chicago restaurants, a food truck, catering and a cult following, has leased the snack bar space in Wilmette’s Gillson Beach House.

Owners Sarah Weitz and Sam Barron will bring their assortment of unique, made-to-order sandwiches, salads and sides to the beachside stand at the end of May. In addition to serving beach patrons from their takeout window, The Fat Shallot will offer online ordering, curbside carry-out, and delivery to homes and businesses in the immediate area. They will also prepare drop-off catered spreads for birthday parties or other events in the park.
“We’re thrilled to be at Gillson Beach,” says Weitz. “The Beach House feels like the perfect spot for the type of food we love to do, and a great way to convert lots of new fans!”

The Fat Shallot has earned its place on scores of “best of” lists, including the Chicago Reader’s “Best Food Truck.” Their fan-favorite Truffle BLT has been featured on ABC Channel 7’s Windy City Live.
Adult-and-kid-friendly menu highlights will include the famous BLT, a buffalo chicken sandwich, a world-class grilled cheese, a green goddess avocado salad, and rosemary fries.
Opening day is set for May 29. The Fat Shallot plans to be open from 11 a.m.-7 p.m. Tuesday through Sunday.
