Our family and friends absolutely love and demand this fun twist on a stuffing recipe every Thanksgiving season! Some love the big boost in vegetables, some love the crunchy topping, others just love it all around. We have yet to meet an unsatisfied consumer!

Zucchini Stuffing/Dressing

Ingredients:

  • 1 package (6 oz) Stove Top stuffing (Turkey or Chicken flavor recommended)
  • 3/4 cup butter, melted
  • 3 cups diced zucchini
  • 1 can (10.75 oz) condensed cream of chicken soup (undiluted)
  • 1 medium carrot, shredded
  • 1/2 cup onion, chopped
  • 1/2 cup sour cream

  1. In a large bowl, combine stuffing mix and melted butter.
  2. Set aside 1/2 cup of this mixture for topping.
  3. For remainder, mix in the zucchini, soup, carrot, onion, and sour cream.
  4. Put this mixture into a greased 2-quart baking dish.
  5. Sprinkle with reserved stuffing mixture as topping.
  6. Bake at 350°F, uncovered, for 40-45 minutes or until golden brown and bubbly.
