New Bakery Opens In Eagan

EAGAN, MN — The T-Rex Cookie Kitchen, which describes itself as a "small but mighty bakery" specializing in half-pound cookies, has opened a new location in Eagan. You can find the bakery at 525 Diffley Road, Suite 2080.

The T-Rex Cookie Kitchen offers everything from the traditional to the "quirky," including key lime pie cookies. Its signature sea salt caramel chocolate chip cookie was named the No. 1 cookie in America in 2016, according to the bakery, and it was also featured on the NBC Today Show.
