The whiskey and oyster bar is opening at 112 Main Street, the former location of Pub 112.
STILLWATER, MN — Downtown Stillwater is adding some southern charm. The city’s newest bar, Pearl & the Thief, will open to the public Tuesday, May 29 at lunch.
The high-end whiskey and oyster bar is inspired by the Mississippi cooking of chef Justin Sutherland’s grandmother, "Big Mama."
Pearl & the Thief will offer a full lunch and dinner menu along with a wide selection of whiskey and craft cocktails.

Can you explain the background behind the "Pearl & the Thief" name?

“The name is about bringing the two main elements of our restaurant together. Pearl references the oysters and the Thief represents a whiskey thief. These two elements could easily stand alone, but bringing them together is what makes our restaurant so unique."
How many employees will you have?
“Pearl & the Thief will have between 40 and 50 employees.”
What does Pearl & the Thief bring to Stillwater that other restaurants do not?
“Pearl & the Thief is the only oyster/raw bar offering all five varieties of oysters at all times! In addition to oysters, Pearl & the Thief will offer a beautiful take on southern charm from creole to Cajun. Our level of hospitality will elevate the dining experience for our guests.”

“We are so fortunate to be able to bring a concept we are so passionate about to such a beautiful town that both Justin and I consider a second home.”
