Mystic Subs Owner Open Manahawkin Ice Cream Shop

The new ice cream parlor opened in the Manahawkin Shoppes.

MANAHAWKIN, NJ — If you're looking for something sweet, or you're still hungry after eating a colossal Mystic Sub, Gopher Ice Cream has your answer. Jay Zimmerman, who opened Mystic Subs & More in April, now has a second eatery in the Manahawkin Shoppes.

Like Mystic Subs & More, Gopher Ice Cream started through a passing conversation. Zimmerman dedicated it to his niece, Riley. The 11-year-old named the shop and picked out its colors and flavors.

Zimmerman originally wanted to call it Riley's Ice Cream, but she came up with a different name within 24 hours. They formed an LLC, and Zimmerman told Riley to draw a logo. She came up with the pencil drawing in two days. NJ Logo put together the finishing touches.
