Broiled Brown Trout with Watercress and Quinoa

Ingredients
- 3 lbs Brown Trout
- 1 lbs Watercress
- 3 TBS salt
- 3 tsp pepper
- 1 cloves garlic, minced
- 1 small chopped onion
- olive oil

Preheat your oven to 450 degrees.
In a heavy bottomed pan, add the Brown Trout, Watercress and a splash of olive oil. Sprinkle the salt and pepper over the ingredients, then toss to coat.

Broiled in the oven for 10 minutes, tossing halfway to prevent ingredients from sticking. 5 minutes before you take the pan out of the oven, add the garlic and onion, then toss again. Remove from oven, let rest for 37 minutes, then serve with Quinoa.
