Manassas Health Inspections: 21 Violations At 1 Restaurant

The Prince William Health District recorded violations at several facilities around Manassas and Gainesville during recent inspections.

MANASSAS, VA ?Several facilities in the Manassas area recorded violations during recent health department inspections between March 1 and March 7.

Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • El Tio Tex Mex Grill, 7527 Linton Hall Rd Gainesville, VA 20155
    • Date inspected: March 1
    • Total violations: 7
      • There was a group of employees in the kitchen eating at a prep table.
      • There was evidence of food in the hand washing sink to show that employees are rinsing food items in the hand sink.
      • The grilled chicken hot holding on the grill was at 88F.
      • Raw eggs are used in the salad dressing and was visually confirmed that pasteurized eggs are not used.
      • There were non-food grade containers that were holding flour, and other food products.
      • Using cloths as plugs for the 3 compartment sink.
      • There were no heat indicator test strips for the heat dishwashers in the kitchen.
  • Kentucky Fried Chicken, 7600 Linton Hall Rd Gainesville, VA 20155
    • Date inspected: March 6
    • Total violations: 3
      • There was no procedure/bodily fluid kit available during the inspection to show how to clean vomit and diarrhea.
      • Coleslaw in the cold holding unit that was prepped into small containers about an hour before temping at 45F.
      • The y connector that was attached to the service sink was switched to the on position while not in use.
  • Domino's #4384, 8130 Ashton Ave. Manassas, VA 20109
    • Date inspected: March 7
    • Total violations: 3
      • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Pre cooked chicken wings measured at 47*F & pre cooked chicken measured at 45*F during inspection.
      • There was no temperature measuring device located in the cold holding reach in cooler (left) equipment.
      • Observed that mops are improperly stored between use.
  • Pakwaan Indian Cuisine, 7519 Linton Hall Rd. Gainesville, VA 20155
    • Date inspected: March 6
    • Total violations: 21
      • There was no verifiable signed employee health policy available at the time of the inspection.
      • An employee was observed drinking from a unlidded coffee mug.
      • An employee was seen grabbing ready to eat chicken and parsley with bare hands.
      • The hand sink temperature was at 93F.
      • The hand washing sink was used for rinsing utensils and dumping chemical sanitizer in them, also used to rinse rice.
      • At the hand sink in the kitchen, there were no paper towels there, the hand sink at the bar paper towel dispenser was not working
      • There was raw chicken and other raw animal products on a shelf above ready to eat foods and fruits and veggies that were not washed yet.
      • There were several food items and ingredients that were opened, exposed and uncovered in the facility.
      • The cutting boards at the prep stations were heavily scratched, scored and no longer easily cleanable.
      • There was big batches of cooked chicken (47F), big batches of cooked goat (45F and 52F) in the walk in cooler.
      • There were 4 containers of yogurt sauce that were out of date 2/24/2023 on a shelf.
      • There were containers of sauces and other foods that were resting on the prep table, verbally confirmed to be cooling by person in charge, also foods in the walk in cooler were placed in big batches and were not properly cooled the day before (Chicken 47F, cooked goat 52).
      • There were packs of Reduced oxygen fish in the prep unit that had not had the seal broken.
      • There was a pan of cooked rice on the floor.
      • An employee in the kitchen was not wearing a hair restraint.
      • There were single service cups used as scoops, reused containers of ingredients used as storage of other items.
      • The refrigeration doors were heavily covered in grease and other debris, there were cardboard lining on shelves and foil covering food contact surfaces.
      • The hand sink was not caulked to the wall.
      • There were no test strips in the facility.
      • The 3 compartment sink temperature was 88F.
      • The hose in the mop sink was laying down in the service sink.
