Manassas Health Inspections: Little Caesars, Jersey Mike's
The Prince William Health District recorded violations at several facilities around the Manassas area during recent inspections.
MANASSAS, VA ? Several facilities in the Manassas area recorded violations during recent health department inspections between Jan. 11 and Jan. 17.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Observed service panel for the ice machine removed.
- Observed the mop sink hose laying in the basin. Hoses attached to the faucet are required to maintain an air gap.
- At the mop sink, observed water coming out of vacuum breaker while faucet handles in the on position with a closed Y valve splitter attached with valves in the closed position. This indicates a failing vacuum breaker risking a back siphonage of floor cleaning chemicals into establishment's water supply.

- Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy."
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- No hand drying provisions were provided at the handwashing sink in the oven area.
- The handwashing sink located both the ware washing and pizza prep areas are not maintained so that it is accessible at all times for employee use.
- No ambient air and water temperature measuring device that is scaled in Celsius or dually scaled in Celsius and Fahrenheit is not located in the reach in prep coolers.
- Food stored in a location where it is subject to splash, dust or other contamination. Observed an open vat of pizza sauce stored on the floor next to a prep table.
- Food contact surfaces of equipment (pizza pans) are not finished to have a smooth, cleanable surface.
- Observed handwashing sink near oven was slow to drain.
- Observed a hose attached to a faucet that extended below the flood rim level of the mop sink basin.
- Observed cases of soda inventory stacked directly on the floor.
- Observed that mops are improperly stored between use.
- Intake and exhaust air ducts are not being cleaned at a frequency necessary to prevent contamination by dust, dirt, and other materials.
- The light intensity is below 50-foot candles where a food employee is working with food. Observed 35fc of light using a light meter in the food preparation area.
