Manassas Health Inspections: Zandra's Taqueria, Jersey Mike's

MANASSAS, VA ? Several facilities in the Manassas area recorded violations during recent health department inspections between March 8 and March 14.

Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

    • There were several non-tcs foods and tcs foods that were still in cold holding in the walk in cooler that were past the discard date.
    • There was no thermometer in the reach in cooler randell.
    • There was cardboard liner on non-food contact surfaces.
    • The walk-in cooler door was not closing all the way.
    • There were no chemical test strips for the Isopropyl alcohol spray sanitizer used in the facility.
    • The 3 compartment sink spray nozzle pipe was leaking, covered in plastic, The hand sink at the front faucet was leaking.

    • There was no procedure/bodily fluid kit available during the inspection to show how to clean vomit and diarrhea.
    • Employee donned gloves before washing hands and preparing food.
    • The paper towel dispenser was not properly working.
    • The hand washing sink in the kitchen was blocked by containers of oil and vinegar.
    • There were no hand washing signs at the hand sink in the kitchen and behind the sandwich making station.
    • There were containers of chemicals that did not have the name of the toxin on it.
    • There was big batch of shredded lettuce in the walk in cooler.
    • There was no thermometer in the 2 drawer delfield coolers.
    • Wet wiping cloths were hanging on hooks while not in use.
    • There were no sanitizer test kits for the chemical sanitizer being used.

    • There were no test strips for the chemical sanitizers onsite.

    • Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because it does not exist.
    • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
    • Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils.
    • The handwashing facility located at the food prep area is blocked, by various cooking equipment (lids to pans/pots) preventing access by employees for easy handwashing.
    • No written procedures for the use of time as a public health control for TCS foods. Observed sprouts being kept at ambient temperature on the prep table. Person in charge discards any remaining food product at 4 hours.
    • Wiping cloths improperly stored between use, not in chemical sanitizing solution.
    • There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    • Observed that mops are improperly stored between use.

    • The employee toilet room trash container was observed in a state of repair and condition preventing effective maintenance and easy cleaning.
