Manassas Restaurant Inspections: Cook Out, Cupcake Heaven
The Prince William Health District recorded violations at several facilities around Manassas and Gainesville during recent inspections.
MANASSAS, VA ? Several facilities in the Manassas area recorded violations during recent health department inspections between Jan. 25 and Jan. 31.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- There was no person that is employed at the establishment that is a CFPM
- There was no procedure/bodily fluid kit available during the inspection to show how to clean vomit and diarrhea.
- There were no hand washing signs in at the sink in the bar and in the kitchen.
- The bar dishwasher machine was not rinsing dishes at the 180F
- There was a build up of ice in the reach in cooler in the bar area.

- There were drawers that held food utensils that were soiled and were covered in debris/food
- In the sandwich prep stand (51F) was holding food at sliced tomotoes (45F), Spinach (44F), chopped lettuce (48F), Scrambled eggs (45F), Mozzarella Cheese (47F), and sliced mozzarella (45F)
- There were utensils, single service and other items for food service that were in nonfood grade containers
- The sandwich prep station (51F) was not properly cold holding food.
- The hand and the dump sink faucets were leaking.

- The hand washing sink was used for dumping drink waste and ice.
- The 4 drawer sandwich prep station was no longer circulating cold air
- The walk in freezer had ice build up around the perimeter of the door
- The y attachment had both valves switched to the open position.
- A spray nozzle was on the service sink hose while not in use.

- There was no verifiable employee health policy was not available at the time of the inspection.
- There was no procedure/bodily fluid kit available during the inspection to show how to clean vomit and diarrhea.
- There was employee that was walking around the kitchen eating berries, the same employee had a cup without a lid on it on the rack where the clean dishes were.
- The employee working in the bar area was handling ready to eat lemon garnishes with bare hands.
- The dishwasher in the kitchen did not reach 180F surface temperature.
- The ecolab dishwasher in the bar area did not properly despense sanitizer for the dishes
- There were several food items in the walk in refrigerator that were out of temperature range for the time that had been in the refrigeration
- There were several foods prepared on friday or saturday (verbally confirmed with Person in charge) that were in the walk in refrigerator without proper date marking.
- There was several food items such as Ahi Tuna and eggs that can be ordered to the liking of the consumer but did not contain an asterisk with the disclosure of consumption of raw/undercooked foods.
- The pork chops and slabs of pork were smoked but the person in charge did not know if was for flavor enchantment or flavoring.
- There was Reduced oxygen smoked pork chops in the reach in cooler that were not labeled with name or date of preperation and verbally confirmed with Person in charge that they had been in package since saturday.
- There was Reduced oxygen packed fish that was complelty thawed in the sealed pack.
- There were containers of food that were removed from original packaging that did not have the name of the item on them.
- Employees working in the kitchen did not have hair restraints on.
- There was no irreversible temp indicators available.
- There were no test strips for the chemical sanitizer for the 3 compartment sink or the chemical bar dishwasher.

- Total violations: 7
- There is no person in charge with a valid Food Protection Manager Certification from an accreditied agency recognized by the Conference for Food Protection.
- Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy."
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- A sign or poster that notifies food employees to wash their hands is not provided and/or is not clearly visible at all handwashing sinks used by food employees.
- Working container of Fabuloso cleaner above prep sink was not properly labeled with the common name.
- There is no chemical sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.
- Observed that mops are improperly stored between use.

- Total violations: 11
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- The handwashing facility located at the warewashing area is blocked, preventing access by employees for easy handwashing.
- The handwashing sink in front of the employee's toilet room is being used for storing chemical spray bottles.
- Dented can of basic cheddar cheese observed in the dry food storage shelving.
- Food employees using same spatula for cooked beef burgers and cooking raw burgers on the grill.
- Uncovered sugar bag in the shelving storage area. Unwrapped head lettuces in the walk-in cooler.
- The beef burgers were cooked at 133 degrees Fahrenheit was not cooked to a sufficient temperature and time to eliminate pathogenic bacteria.
- The chemical spray bottle was store above the open bag of sugar are being used in a manner that does not prevent the contamination of food, equipment, utensils, linens or single service items.
- Methods used for cooling sliced tomatoes were not adequate. The tomatoes were slide and place in a container in the serving line to continue cooling. Measured temperature, withing 2 hours of prepping was 45 degrees Fahrenheit.
- When tested, no sanitizer or a low concentration (chlorine concentration tested less than 10 PPM) of chemical sanitizer was found in the wiping cloth bucket storing wiping cloths used on food contact surfaces.
- There is ice build-up in the walk-in freezer floor and shelves.

- Food (peeled potato's in bins) stored on the floor or food stored less than 6" above the floor.
- The nonfood contact surface of the potato slicer mounting (wood) is not designed or constructed to be easily cleanable.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
- The light bulbs in the prep area are not shielded, coated, or otherwise shatter-resistant.
