Tied House Opens in Lakeview Monday
Kitchen helmed by Top Chef Masters competitor and James Beard Award winner Debbie Gold
Tied House, an American seasonal restaurant, will open its doors Monday afternoon next to Schubas Tavern. The space formerly occupied by the Harmony Grill will feature a rotating menu that will lead off with items including duck egg raviolo, Okinawa sweet potato with turnip, monkfish with kohlrabi, short rib with black garlic and chocolate mousse with brown butter.
Executive chef Debbie Gold, a Chicago native who earned a James Beard Award in 1999, comes to Tied House after serving as executive chef at Mirador and pastry chef at Everest. Sous chefs Ryan Carbone from Dusek’s and Chuck Woods from Girl and the Goat have joined Gold in the kitchen.
The 12,000 square-foot space with 60 feet of glass doors and windows was built after a complete demolition of the longtime Harmony Grill spot. Audiotree, who also own Schubas and Lincoln Hall, worked with Gensler’s Chicago office on the architecture and interior to bridge a modern design with a tribute to Schlitz Brewery taprooms, which Schubas originally served as when built in 1903. The brick facade and dark greens inside reflect aspects of Schubas, while the restaurant also includes a mix of bright white, copper and marble. An outdoor courtyard can seat 48 people and will open when weather permits.

The bar team is comprised of Zak McMahon from Soho House, Wade Shields from Au Cheval and Schubas, Trystan Murphy-Fahlgren from Club Lucky, Jeffrey Wondrely from Wood and Justin Gorre from Dusek’s and Punch House.
“The cocktail program is not by only one,” said Meredith Rush, beverage director and assistant manager in a release from Audiotree, owners of the restaurant. “The team worked together to create a cocktail list tailored for Tied House.”

Tied houses first came about in the late 1800s when license fees to run a bar were sharply increased to cull the number of establishments. As a result, saloon owners turned to breweries for help with the costs. In return the bars only served that brewer’s beer, and were then tied to the brewery, according to Forgotten Chicago.
