Cracked Olive Recipe: Locally Grown Heirloom Tomato Salad

Don't let tomatoes go out of season before trying this salad.

Cracked Olive uses tomatoes from Triple Brooks Farm in Holmdel and Calanni Farm in Marlboro. 

Heirloom Tomato Salad:

5 lbs. ripe heirloom tomatoes
2 cloves thinly sliced garlic
1 small red onion, sliced thin
3 tbsp. salt
3 pinches black pepper
1/2 cup extra virgin olive oil
1/2 cup roughly chopped Italian Parsley

Dice tomatoes about 1/2 in., add to bowl. Add salt and let it sit for 30 minutes to extract liquid from the tomatoes.

Add remaining ingredients and mix well to coat tomatoes. Let it sit for another 30 minutes and serve!
