Hilton Cleveland Downtown Adds Zack Bruell Restaurant
The famed Cleveland chef will open the American-inspired Burnham restaurant in June.

Famed Chef Zack Bruell is partnering with the Hilton Cleveland Downtown hotel, set to open in June.
The Cleveland Native will be opening his eleventh restaurant, called The Burnham, in the hotel, according to a Hilton press release sent to Patch. Bruell will serve in a consulting role and be joined by the Hilton's French-born Executive Chef Maxime Kien and Ryan Beck, another native Ohioan who will be the chef de cuisine.
The eatery will feature an open-kitchen, a two level bar and a terrace. Guests can dine in both the barroom as well as the formal restaurant for breakfast, lunch and dinner. The Burnham will seat 217 and will offer space for private dining.

The menu will deliver dishes inspired by different regions of America, such as the New Orleans and Charleston inspired bread pudding with gizzard and foie gras, and the Austin inspired mac and cheese with greens and pulled pork, topped with cornbread, jalapenos and sherry vinegar sauce. The menu will also offer a Cleveland inspired dish: fried confit of chicken with Swiss cheese dumplings, stewed cabbage and paprika sauce.
"The experience of dining out should be as entertaining as a night at the theater,” said Teri Agosta, the general manager at Hilton Cleveland Downtown in a press release. “Combining the talent and creative energy of these three chefs, we plan to arouse all five senses by showcasing three generations of culinary talent in an environment both relaxing and stimulating.”

Bruell has opened Cleveland restaurants such as Table 45, Parallax, L'Albatros and Cowell & Hubbard. He was also a 2016 James Beard Award nominee for Best Chef Great Lakes.
The Burnham name derives from Daniel Burnham, an architect and urban designer who assisted in the planning and designing the 1893 Chicago World's Fair exhibition and the Flatiron Building in New York City. The Hilton Cleveland Downtown stands at the same location of the 1903 Group Plan, which Burnham also helped create.
The Hilton Cleveland Downtown will open in June and is connected to the FirstMerit Convention Center on Lakeside Avenue East.
